Cauliflower, the most unlikely superfood yet

No problem, because last year's superfood has been replaced with a new one: cauliflower.
Yes, the white veg they boiled to near-mush at school is back on the menu.
Health guru sisters Hemsley & Hemsley, who wrote one of this year's best-selling cookbooks and advocate gluten-free cooking, have helped the trend: their recipes for cauliflower ‘rice' and mash have proved wildly popular with foodies looking to cut their carbs.
It couldn't be easier to make — for ‘rice', just grate a cauliflower into a pan, add two tablespoons of water and a knob of butter and steam with the lid on for two minutes before seasoning and serving; it's surprisingly delicious.
You can also add spices and nuts to turn it into a pilau.
For mash, just boil and then mash with plenty of butter.
